Description

This technical regulation establishes the specifications that matured cheeses must comply with according to the definition in section 4 of this regulatory framework. It defines classification requirements based on fat content and humidity, establishes the composition of permitted raw materials including milk and dairy products, specifies authorized ingredients and additives for production. It determines maximum levels of permitted contaminants and establishes hygiene, labeling, packaging and storage requirements. It applies to matured cheeses intended for direct human consumption or further processing in the territory of Central American Member States.
