Description

The standard establishes the physico-chemical and microbiological specifications for Apis mellifera honey marketed in El Salvador, regardless of its origin, presentation and final destination. It defines classifications by botanical origin (flower honey and honeydew honey), harvesting procedure (drained, pressed, centrifuged), presentation, production method (conventional and organic) and destination (direct consumption and industrial). It establishes composition requirements, organoleptic characteristics, maturity and deterioration parameters, microbiological limits, and maximum limits for veterinary product residues and environmental contaminants. The standard prohibits the use of additives and adulterants, specifies analysis methods based on AOAC International and FDA, and establishes labeling requirements according to Salvadoran standards. It defines compliance and verification responsibility between the Ministry of Public Health, Ministry of Agriculture and Livestock, and the Consumer Ombudsman according to product type and commercialization status.
